Our kitchen is a workshop, the place where we create authentic homemade products and transform genuine raw materials, selected from a network of small local producers.
The bread, the white pizzas and the breadsticks are made with of our Enki Beer yeast – Birrai di Maremma – combined with flours of ancient varieties of cereals such as soft wheat Verna, Gentil Rosso, Frassineto, Cappelli durum wheat.
Over time we developed a series of English gardens from which we collect most of the vegetables that accompany the seasonal recipes. Other products, such as cured meats, cheeses, meats, legumes, come all from zero-kilometer farms.
