Bianco IGP Toscana wine 2018

Serafìco is our leading white wine, obtained from Vermentino and Petit Manseng grapes surmaturated in a plant coming from anover thirty years old vineyard. The fermentation in acacia wood gives it a unique and atypical character. The aroma reveals tones of aromatic herbs, elderberry and acacia honey, while the taste reveals a pleasant flavor and a good acidity that balances the fatness. The name of our wine derives from “serafìca”, an annoying insect of the Maremma coast.



  • Production place : Capalbio, 30 y.o. vineyard.
  • Grape variety: Vermentino, Petit Manseng.
  • Soil: Clay-sandy
  • ALC: 14,5 % vol
  • Harvest: Hand harvesting.
  • Wine making process: The grapes undergo cold maceration in a press (12 hours at 5°). After the pressing phase, the must undergoes static, natural low temperature decanting. Subsequent alcoholic fermentation starts in stainless steel vats under temperature controlled conditions (16°), than the must is racked in acacia barrels where the fermentation is completed.
  • Skin contact: 20 days.
  • Malolactic fermentation: Partially processed.
  • Ageing: 14 months in acacia barrels, with frequent batonnage to stir the fine lees. Followed by 6 months of bottle ageing..
