Our Di Macchia contains the best selection of Vermentino grapes, grown and harvested in our vineyards within the Valle d’Oro in Capalbio. It is a wine with a medium body, rich and mineral with a good flavour. Very vigorous is the aroma of peach, pear citrus fruit and Mediterranean scrub.
Wine making process: The grapes undergo cold maceration in a press (12 hours at 5 °c). Afetr the pressing phase, the must undergoes static, natural low temperature decanting. Subsequent alcoholic fermentation takes place stainless steel vats under temperature controlled conditions (16°C).
Malolactic fermentation: Partially processed in stainless steel.
Ageing: 95% 6 months in stainless steel in the fine lees, 5% 6 months in french oak barrels.
